Elizabeth "Betty" L. Einck, age 91 of Redwood Falls, Minnesota, passed away on Thursday May 25th, 2023 at the Gil-Mor Manor Nursing Home in Morgan, MN. Mass of Christian Burial will be held at 11 a.m. on Wednesday, May 31, 2023 at St. Catherine's Catholic Church in Redwood Falls, with burial to follow in St. Leo's Catholic Cemetery in Pipestone, MN. Visitation will be held 4:30 until 8 p.m. with a Prayer Service at 4 p.m. on Tuesday May 30, 2023 all at Nelson-Hillestad Funeral Home in Redwood Falls. Visitation will continue 10 a.m. until 11 a.m. Wednesday, May 31, 2023 at St. Catherine's Catholic Church.

Betty was born on June 30th, 1931 in Dell Rapids, South Dakota and was the daughter of Ernest Sr. and Christina (VanDam) Enick. She graduated from Pipestone High School in 1949 and attended Lamberton Teachers College in 1950. Betty Married Merle Einck on April 14,1952 at St. Leo's Catholic Church in Pipestone, MN.
Betty had a successful career. She taught for 2 years at District 15 in Pipestone, MN before working for Armour Produce and Lange's Cafe bakery also located in Pipestone. For almost two decades she worked at MPI/Zytec/Artysen in Redwood Falls and retired in October of 1998.
In her personal life, Betty enjoyed gardening, sewing and scrapbooking. She was a proud member of St. Catherine's Catholic Church and CCW. She also taught Catechism for several years.
Betty is survived by her children; Ruth Smith of Victoria, MN; Karla (John) Whipple of Pipestone, MN; Dan (Janet) Einck of Slayton, MN; Jerry Einck of Mexia, TX; Lori (Thomas) DeSchepper also of Pipestone, MN; Jean (Michael) Miller of Brandon, SD; Dallas (Connie) Einck; Joan (Jeffrey) Schmidt; and Leon (Cindy) Einck all from Redwood Falls.
She is preceded in death by her husband Merle who passed in January 2, 2005, sisters Mary Ann (Leonard) Steele; Darlene (Bernard) Ford; Ardis (Loren) Veen; brothers Nicholas Meyer; Edward Meyer; Clarence (Jackie) Meyer; Ernest Jr. (Darlene) Meyer as well as her brother-in-law Dale (Darlene) Einck, one grandson, Joshua Einck, and one great-granddaughter Harmonie Einck.
